Chateau Mercian Yamanashi is a light white wine from Yamanashi, Japan. It's 100% Koshu with 11.5% abv.

Aromas of bittersweet pink grapefruit and roses lead into a rounded, waxy palate full of lemons, limes, green plums and sudachi citrus. Fermented in stainless steel at low temperatures for 14 days to preserve its fruit flavour, the wine is then aged for around 8 months in stainless steel on its lees to develop complex flavours and a grippy texture.

Pairs beautifully with: Green leaf salad and citrus dressing, various sashimi, fish pie, Spanish mackerel, seafood paella or sauteed cuttlefish.
