Much of the Ukraine's wine-producing history was focused in Crimea until the 20th Century when wine-making expanded across the mainland. Since the fall of the Soviet Union, quality production of wine in Ukraine has seen vast increases thanks to wine-makers adopting modern technologies and a west European approach to wine-making that focuses both on quality and restraint.
