Leduc Piedimonte Ice Cider is a sweet cider from Quebec, Canada. It's a blend of Spartan and Empire Canadian apples with 13.0% abv.
Made using the "Quebec method" whereby the apples naturally freeze outside and are harvested, over ripe, in the early hours. Pressing the fruit frozen concentrates the juice into an intensely sweet nectar. The process relies on an abundance of quality apples and for temperatures to drop below -25C. The golden must from the pressed apples is fermented slowly so that complex flavours can develop. Notes of pink grapefruit preserve, oranges, lemon and honey are layered over a backbone of bitter orchard apples. The finish is indulgent but refreshing.
Pairs beautifully with: Panna cotta and sweet desserts
Cheese pairing: Very mature farmer's Cheddar.
