Low sulphites. Peter Benedek's Pinot Noir is grown on a single vineyard Tüzköves near the village of Gyöngyöstarján, a hilly site with good drainage and a regular breeze. The vines are deep-rooted into volcanic soils, rich with chalk, andesite and rhyolite. The vines are organically farmed and 15 years old, offering concentrated and healthy fruit. Fermentation is with wild yeasts in stainless steel to preserve freshness. Finally, it's rested in stainless steel tank for six months before bottling. It's a bright ruby wine with a melody of cranberries, red cherries, black pepper, caraway and red plum.
