The Ishimoto Brewery
The Ishimoto Brewing Company is in the Niigata Prefecture and famed for it Koshi no Kanbai labels. Shogo Ishimoto started a legacy of sake excellent, producing a ginjo in 1946, an incredible feat at a time when both rice and sake were strictly rationed. In the years since he refined his vision and set the model for the Niigata style - a quality sake that is drier and cleaner rather than sweet or heavy. His labels take sake brewing to their limits and have been described as an "intellectual exercise" that "asks the sake drinker more questions than it answers".
