Domaine J. Laurens Blanquette de Limoux is a sparkling wine from Languedoc, France. It's 90% Mauzac Blanc and 10% Chardonnay with 12.0% abv.
Created by former Champagne winemaker Henri Albrus, this superb sparkling wine gives you excellent value for money. Known as 'blanquette' for the fine white coating which forms on its leaves, the Mauzac grape of the Blanquette appellation in Limoux may not be as well known as the noble Champagne varieties but it makes a very fine fizz. Mauzac has naturally high acidity and is packed with fresh apple character. Grown on rocky clay, sandstone and limestone soils and then pressed before fermentation in stainless steel tanks. The wine rests on its lees for 9 months, giving it a delicately yeasty, pastry-like note on the finish.
Pairs beautifully with: Quiche, simply grilled white fish or salmon and cucumber sandwiches (when the sun's shining).
Cheese pairing: Baked Camembert or a goat's cheese Brie.
