Blue River Koshi no Kanbai "Sai" is a dry sake from Niigata PrefectureJapan. It uses the 500 Mangoku and Yamadanishiki rive varieties with a polishing ratio of 55% and 15.0% abv. 1.4 acidity and +2.0 SMV. Suitable for Vegans.

Koshi no Kanbai is Japan's most famous and sought-after sake. Even as a young man, brewer Shogo Ishimoto's knack for making exceptional sakes was evident. His focus on sake excellence he has continued to refine his vision with a cleaner, drier expression of sake beautifully encapsulated in this "Sai" Blue River label. Specially brewed and matured at low temperatures to preserve delicacy. Aromatic with a precise, smooth palate that accentuates the umami of rice. Serve hot, or even better chilled.

Pairs beautifully with: Sushi (this is one of our top sakes with sushi), sashimi, grilled squid or octopus, tempura courgettes, or fresh melon and cured meats.
