Chateau Mercian Koshu Sur Lie is a dry white wine from Yamanashi, Japan. It's 100% Koshu with 11.5% abv. Suitable for Vegans.
Koshu can date its history in Japan as far back as 1186 when it is recorded as growing wild at Katsunama in Yamanashi prefecture. Today the grapes create some of Japan's most celebrated, elegant wines. Fermented in stainless steel at low temperatures for 14 days to preserve its fruit flavour, the wine is then aged for around 8 months in stainless steel on its lees to develop complex flavours and a grippy texture. Aromas of bittersweet pink grapefruit and roses lead into a rounded, waxy palate full of lemons, limes, green plums and sudachi citrus.
Pairs beautifully with: Green leaf salad and citrus dressing, various sashimi, fish pie, Spanish mackerel, seafood paella or sauteed cuttlefish.
Cheese pairing: Light sheep's cheese.
