Ink Gin

Discover the story of Ink Gin. Distiller Paul Messenger was introduced to the traditional Thai drink Dok un Chan in 2011 that used the natural flower Butterfly Pea Clitoria ternatea. Knowing tonic is acidic, he discovered that ink from the pH sensitive flower would change colour, and thus his Ink gin was born. In 2015 he made a world first when he applied for an Innovation Patent for his discovery and the following year it became one of the most popular gins in Australia -and favoured by celebs like Margot Robbie.
